I really wanted to title this recipe “Vibrant Winter Salad” but I realized that almost all of you in readership-land have moved out of winter and into spring. It’s truly a great salad for the winter though since it features root veggies and cabbage- common staples during the colder months. Of course, it’s so tasty you can enjoy it any time of the year!

I make grain-based hot cereals for my kids most mornings through the fall and winter. One evening I had the inspiration to combine some grains into a hot cereal, and then mung beans popped to mind as a nice addition. Mung beans have a fairly neutral flavor, cook more quickly than a lot of other legumes and they contribute nice texture and nutrition to this porridge.
