Muesli is a breakfast cereal of Swiss origin. It’s composed of a mixture of rolled oats, dried fruit, nuts and seeds and is typically eaten topped with milk (either soaked in milk overnight or added just before serving). I kind of think of it as a raw, unsweetened granola.
Knowing I’m always on the lookout for inspiration for quick and easy gluten-free desserts, my teenage son (already quite a foodie) forwarded a recipe from the Kitchn site that inspired these great pumpkin spice bars.
