Gluten-free Muffins – Recipes

Muffins are a wonderful breakfast choice and can provide a nice snack option as well. I’ve had great success developing gluten-free muffin recipes with all whole-food ingredients. These recipes are not only gluten-free but avoid all the gums, starches and refined flours you find in a lot of gluten-free recipes. They only use a fraction of the oil and sweetener you’ll find in traditional muffin recipes. Ground flax serves as a binder and provides nice moisture. These are sure to be some of the healthiest (and tastiest!) muffins you’ve ever made!

Some general tips for developing your own  EXCELLENT gluten-free muffin recipes:

  • Include plenty of liquid (water, non-dairy milk, applesauce, etc.) to adequately hydrate the gluten-free flours and keep the muffins moist.
  • Use ground flax (or ground chia) to help the gluten-free flours hold together and add a little extra natural fiber to your diet.
  • Only briefly combine the wet and dry ingredients. Minimal mixing provides the nicest texture.
  • Consider investing in a muffin baking stone. The ease of clean-up is truly worth it!
